'O Pere e 'o Musso

Pigs' feet served with veal snout.

In the area of Naples, there is a traditional street food called 'o pere e 'o musso, meaning: il piede e il muso (the foot and the snout).

The pigs' feet and the veal snouts are boiled, rinsed, chopped and mixed with olive oil, salt and lemon juice.  This mixture can be kept in the refrigerator.   It is served cold.
