Les Escargots de Bourgogne
Snails prepared with garlic and parsley butter.
Bourgogne is an area in central-eastern France. In English it is known as Burgundy. This area is famous for its large snails. They are referred to as les escargots de Bourgogne.
They are prepared by filling the shells with garlic and parsley butter. They are then baked in the oven until the butter mixture melts.
The snails can be presented for dinner in a specially-designed dish called une assiette à escargots that prevents them from rolling. To eat them, you can use a special fork called une fourchette à escargot to pull them out of the shell.
