Il Cervello Fritto
Fried Brain

Il cervello fritto is a traditional Roman dish, but it is prepared all over Italy. 

The brain of cow, sheep or pig can be used.​  The brain is first boiled, then sliced into strips which are then dipped in flour, or batter, or breadcrumbs.  Finally, the pieces are fried.
