Il Capitone Fritto
Fried Eel
Il capitone is a large, female eel. It looks like a snake and can grow to a length of 1.5 metres. Il capitone is eaten all over Italy and prepared in many different ways. It is a traditional food to eat on Christmas Eve in southern Italy.
Il capitone fritto is prepared by cutting the snake-like eel into sections, coating the pieces in flour and frying them in oil for at least 15 minutes on each side so they are thoroughly cooked.
The pieces are drained on absorbent paper, sprinkled with salt and served with a salad.
