Gallinejas
Fried Intestines of Lamb or Goat

Las gallinejas is a traditional food of Madrid.  They are the fried intestines of lamb or goat and are often eaten in May to celebrate the festival of San Isidro, (Saint Isidore). the patron saint of Madrid. 

This type of food belongs to a category called la casquería.  This food category makes use of the cheapest, left-over pieces, instead of throwing them away.
