Chicken Crests
La cresta is the spiky shape on the top of a hen's or cockerel's head. In Spain, this part is eaten and used in traditional dishes. This animal part belongs to a food category called la casquería. This category involves animal parts that are not considered to be meat but are used for food rather than throwing them away.
Las crestas de gallo can be served simply fried (fritas), mixed with rice (con arroz) or they can be prepared in a pan-cooked stew (guisadas).
