Buñuelos de Sesos
Brain Fritters
Los buñuelos are fritters. There are various types. Here we have those made with the brain of either sheep, pig or cow. Los sesos is a way to say 'brains.'
First, the brains are gently boiled. Next, they are cut into small pieces and coated in a flour and egg mixture. Finally, they are deep-fried.
